Leftover BBQ Breakfast

Oooops!  Just when I thought all the guests had left for the evening …..they didn’t. We woke up to the leftovers both in the people variety and food. I wasn’t planning on serving breakfast but quickly needed to whip something up. Not tons of options in the fridge but had lots of ribs and garlic mashed potatoes from yesterday’s BBQ.

So…. take those potatoes and form into pancakes. Shread the pork off the bones. In a large skillet add a tablespoon of olive oil and 1 or 2 tablespoons of butter. Cook the potato pancakes til browned on each side. Heat the pork in the same pan. In a medium saucepan poach your eggs. To assemble top your potato with pork and then place your egg to finish.  I’m thinking a Bloody Mary would pair quite well with this breakfast!!
